The Story Behind The Pear of Aces

There aren’t many cocktails out there using cachaça as their base, but there should be. The spirit lends a more herbaceous and floral edge to cocktails and stars in the Pear of Aces, created by Meaghan Dorman at the Raines Law Room at the William in NYC. “We wanted to capture seasonal flavors but introduce a more unique spirit for the season. The sugar cane brightness makes this cocktail fun,” Dorman says.

The cachaça is accompanied by St. George Spiced Pear Liqueur, which creates a medley of grassy flavors highlighted by notes of pear, cinnamon, and clove spice.


  • 1 ½ ounces cachaça
  • 1 ounce St. George Spiced Pear Liqueur
  • ½ ounce lemon juice
  • ½ ounce cinnamon syrup
  • 2 dashes Angostura bitters
  • Garnish: pear slices


  1. Add all ingredients to a shaker tin with ice and shake vigorously.
  2. Strain into a coupe glass.
  3. Garnish with pear slices.
